Recipe
From my grandma's cook book to you
-
1½–2 pounds boneless, skinless chicken breast, cut into bite-sized pieces
-
2 tablespoons olive oil
-
2 tablespoons low-sodium soy sauce
-
Juice of 1 lime
-
1 teaspoon Tabasco sauce, optional
-
Sprinkle of garlic powder, optional
-
2 teaspoons Humble Salt seasoning
-
2–4 cups cooked white rice
-
1 bag frozen broccoli florets
-
1 tablespoon olive oil
-
1–2 teaspoons Humble Salt seasoning
Instructions:
-
In a large bowl, combine 2 tablespoons olive oil, soy sauce, lime juice, Tabasco, garlic powder, and 2 teaspoons Humble Salt. Add the chicken and toss until evenly coated.
-
Marinate for at least 30 minutes, or up to 4 hours for deeper flavor.
-
Cook the white rice according to package instructions and set aside.
-
Toss the frozen broccoli with 1 tablespoon olive oil and 1 teaspoon Humble Salt seasoning until evenly coated.
-
Preheat the air fryer to 380°F.
-
Place the marinated chicken in the air fryer basket in a single layer. Air fry for 10–12 minutes, shaking the basket halfway through cooking. The chicken is done when it reaches an internal temperature of 165°F.
-
Air fry the broccoli at 380°F for 10–12 minutes, shaking halfway through, until tender with lightly crisped edges.
-
Divide the cooked white rice among serving bowls. Top with the chicken and broccoli.
-
Finish with a very light sprinkle of Humble Salt and a squeeze of fresh lime juice just before serving.
