- 2 thick slices sourdough bread
- 1 large ripe avocado
- 1 tablespoon fresh lemon juice
- 1 teaspoon Humble Salt seasoning, plus more for finishing
- 1 teaspoon olive oil
- 2 eggs, optional
- 2 tablespoons crumbled feta cheese
- ¼ cup cherry tomatoes, halved
- Pinch of red pepper flakes
Instructions:

Toast the sourdough until golden brown and crisp.

In a small bowl, mash the avocado with the lemon juice and Humble Salt seasoning, leaving the mixture slightly chunky for texture.

If adding eggs, heat a nonstick skillet over medium heat and cook the eggs until the whites are set and the yolks remain soft and runny, about 2–3 minutes.

Spread the avocado mixture evenly over each slice of toasted sourdough.

Add the crumbled feta cheese and cherry tomatoes.

Top each slice with an egg, if desired.

Drizzle with olive oil and finish with red pepper flakes.

Sprinkle with additional Humble Salt seasoning just before serving and enjoy immediately.
