Ingredients

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons avocado oil
  • 2–3 teaspoons Humble Salt
  • Original Blend1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley

Humble Salt Avocado Toast

Simple ingredients. Big flavor. This elevated avocado toast combines creamy avocado, crispy sourdough, rich eggs, and a finishing sprinkle of Humble Salt for the perfect balance of freshness and savory goodness.

From my grandma's cook book to you

  • 2 thick slices sourdough bread
  • 1 large ripe avocado
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Humble Salt seasoning, plus more for finishing
  • 1 teaspoon olive oil
  • 2 eggs, optional
  • 2 tablespoons crumbled feta cheese
  • ¼ cup cherry tomatoes, halved
  • Pinch of red pepper flakes

 

 

Instructions:

  1. Toast the sourdough until golden brown and crisp.

  2. In a small bowl, mash the avocado with the lemon juice and Humble Salt seasoning, leaving the mixture slightly chunky for texture.

  3. If adding eggs, heat a nonstick skillet over medium heat and cook the eggs until the whites are set and the yolks remain soft and runny, about 2–3 minutes.

  4. Spread the avocado mixture evenly over each slice of toasted sourdough.

  5. Add the crumbled feta cheese and cherry tomatoes.

  6. Top each slice with an egg, if desired.

  7. Drizzle with olive oil and finish with red pepper flakes.

  8. Sprinkle with additional Humble Salt seasoning just before serving and enjoy immediately.
